Ingredients (Serves 4-6 people)
For the Stuffed Vegetables:
5-6 large ripe tomatoes
5-6 medium bell peppers (red, yellow, or green)
1 large zucchini (optional, finely grated)
1 medium potato (optional, cut into wedges, to roast alongside)
For the Filling:
1 ½ cups Arborio rice (or any short-grain rice)
1 large onion, finely chopped
2 cloves garlic, minced
½ cup extra virgin olive oil
1 medium carrot, grated
1 small eggplant, finely diced (optional)
½ cup fresh parsley, chopped
½ cup fresh mint, chopped
1 teaspoon dried oregano
1 teaspoon salt (or to taste)
½ teaspoon black pepper
½ teaspoon cinnamon (optional, for extra depth of flavor)
2 tablespoons tomato paste
2 cups vegetable broth (or water)
Juice of ½ lemon
Step-by-Step Instructions
Step 1: Prepare the Vegetables
Preheat your oven to 375°F (190°C).
Wash the tomatoes and bell peppers thoroughly.
Slice off the tops of the tomatoes and peppers, keeping the tops as lids.
Using a spoon, carefully scoop out the tomato flesh and transfer it to a bowl.
Remove the seeds from the peppers, leaving them hollow.
Step 2: Make the Filling
In a food processor, blend the scooped-out tomato flesh until smooth.
In a large pan, heat half the olive oil over medium heat. Add the chopped onion and garlic, sauté until soft.
Stir in the grated carrot, diced eggplant (if using), and zucchini, cooking for 3-4 minutes.
Add the rice, tomato paste, and spices (salt, pepper, oregano, cinnamon). Stir well.
Pour in 1 cup of the blended tomato puree and 1 cup of vegetable broth, simmer until the rice absorbs most of the liquid (about 5-7 minutes).
Remove from heat and stir in the chopped parsley and mint. Let the filling cool slightly.
Step 3: Stuff & Assemble
Fill each tomato and bell pepper with the rice mixture, leaving a little space at the top for the rice to expand.
Place the tops (lids) back on each stuffed vegetable.
Arrange them in a baking dish, nestling the potato wedges around them (for extra flavor!).
Drizzle the remaining tomato puree and vegetable broth over the dish.
Drizzle the remaining olive oil over the vegetables.
Step 4: Bake to Perfection
Cover the dish with aluminum foil and bake for 45 minutes.
Remove the foil and bake for another 30-40 minutes until the rice is fully cooked and the tops are slightly caramelized.
Let the Gemista rest for 15 minutes before serving to allow the flavors to meld.
